Sunday Brunch Banana oat baked french toast

If anyone is looking for a little weekend brunch inspiration, then this is a pretty simple one and doesn't involve lots of complicated and fancy ingredients.

Ingredients
1 small banana
1/4 Cup unsweetend almond milk
1 Tbsp Nut Butter (I used natural PB with coconut, but almond or cashew would be lovely too) 
1 Tsp Maple Syrup
1/2 Tsp ground cinnamon
1/2 Tsp Vanilla Extract
1 slice of hearty bloomer loaf, cut into cubes
1/4 Cup Rolled Oats

Method
Preheat oven to 180c and lightly grease a medium sized oven safe dish. 

Combine the mashed banana, almond milk, nut butter, maple syrup, cinnamon and vanilla in a large bowl, mixing until fully combines. Cut up your bread and add to the mixture and use a fork to gently press down so that they absorb most of the liquid.

Add in the oats and gently store until everything is evenly incorporate, if the mix seems to dry add a splash more almond milk.

You can add some optional extras in to the mixture maybe try raspberries and bluberrys, or sliced thin apple.

Transfer the mixture to your prepared dish - you can add a few slices of banana on top if you desire. Bake for about 20 minutes until the bake has turned golden brown.

Serve as it is or with toppings of your choice, I like to have coconut yogurt, cut up strawberries, toasted almonds and pumpkin seeds.
